Banana Oat Bars

Recently my cousin posted a link to a promising recipe on facebook. I read the recipe and a number of the comments on it, then tried it for myself. Here it is, along with a few personal adjustments I made as a result of reading the comments.





Ingredients:
1 1/3 C. quick cooking oats
1/4 C. brown sugar
1/4 C. whole wheat pastry flour
1/4 C. maple syrup (I used sugar free)
2 t. baking powder
1 t. cinnamon
dash of nutmeg
1/2 t. baking soda
1/2 c. dried cranberries (I chopped mine up a bit)
1/2 C. unsweetened shredded coconut
1 1/2 C. mashed banana
1/4 C. non-fat yogurt
2 egg whites
1 t. vanilla extract

Mix all dry ingredients together in one bowl, and all wet ingredients together in a separate bowl. Gradually add the dry ingredients to the wet, mixing thoroughly. Pour batter into a non-stick sprayed 9 x 13 inch pan. Bake for 35 minutes at 350 degrees. Let cool. Cut into bars.

Makes 18 bars (1 WW point each)
